Canape with hummus and pomegranate

Canapes with Hummus and Pomegranate

Ingredients:

  • 30 salty crackers;
  • ⅔ glasses of hummus;
  • ⅓ glasses of pomegranate seeds;
  • 3 tablespoons shredded feta cheese
  • fresh mint leaves for decoration.

Preparation

  1. Spread some hummus over the crackers. If desired, cookies can be replaced with tartlets.
  2. Sprinkle with pomegranate seeds, feta cheese and chopped mint leaves on top.
  3. Enjoy.

Ingredients:

  • 280g frozen spinach (thawed)
  • 1 tablespoon olive oil
  • 1/2 onion, cut into thin rings;
  • 2 green onions, thinly sliced;
  • 2 cloves of garlic, minced;
  • ½ teaspoon dried oregano
  • ½ teaspoon hot pepper (optional);
  • salt and freshly ground black pepper to taste;
  • ¼ cups of freshly chopped dill
  • 1 teaspoon lemon zest
  • 1 cup shredded feta cheese
  • a pinch of nutmeg (optional);
  • 10 sheets of filo dough;
  • ¾ cup butter, melted.

Preparation

  1. You will have to tinker a little with this appetizer, but it will turn out to be a lot and very tasty! Preheat oven to 175 degrees and line two medium baking sheets with parchment paper. Using a clean kitchen towel, squeeze any excess moisture out of the defrosted spinach. Transfer to a large bowl.
  2. Heat oil in a large skillet over medium-high heat. Add onions and green onions and sauté for 5 minutes. Then add the garlic, oregano and red hot peppers, and season with salt and pepper. Transfer the mixture to a bowl of spinach.
  3. Add dill, lemon zest, feta and nutmeg to a bowl of spinach and stir until smooth. Taste and add more salt and black pepper if necessary.
  4. Remove the filo dough from the refrigerator and cover with a slightly damp kitchen towel. Take one sheet, place it on a clean surface, brush it with melted butter, then cover with another sheet. Also lubricate it with oil. Then cut them into six long strips of equal size.
  5. Place a tablespoon of the filling in the corner closest to you on one strip of filo and roll into a roll. Prepare as many rolls as there is enough filling.
  6. Place the rolls on a baking sheet, seam side down and brush with butter. Bake until golden brown and crisp, 20 to 23 minutes. Let cool slightly before serving.

Goat cheese sauce with herbs

Ingredients:

  • 1 cup shredded goat cheese, room temperature
  • ½ cup ricotta cheese (can be substituted with cottage cheese);
  • 2 finely chopped onions;
  • ¼ cup finely chopped fresh parsley
  • 2 teaspoons lemon zest
  • 2 tablespoons lemon juice
  • salt and freshly ground black pepper to taste;
  • olive oil;
  • grissini or breadsticks to serve.

Preparation

  1. Grind the goat cheese and ricotta (curd) in a food processor or blender until smooth, about 1 to 2 minutes. Transfer to a bowl and add green onions, parsley, zest and lemon juice. Season with salt and pepper. Mix everything again.
  2. Sprinkle with parsley on top and drizzle with olive oil. Serve with grissini or breadsticks.

  • honey;
  • chopped pistachios.

Preparation

  1. Cut the cheese into small cubes and string on skewers or toothpicks. Dip feta cubes in honey and let the excess drain.
  2. Sprinkle immediately with finely chopped pistachios.
  3. Can be refrigerated before serving.
